An Unusual Cake Recipe Using Chocolate and Zucchini (Courgette)

Ingredients:

Half C. to 1 cupful chocolate chips
three zucchini, about six inches in length, cut into thin shreds (approx. two cups)
1 t. ground cinnamon
2 A half cup of plain white flour
3 fresh eggs
1/2 cup real butter
One tsp vanilla
1/2 cup ordinary sugar
1 cupful brown or muscovado sugar
half a cup vegetable oil
Half C. buttermilk
4 tbsp cocoa powder
1 t. table salt
2 teaspoons bicarbonate of soda

Heres What You Need To Do:

In advance, preheat oven to 160 degrees Celsius.

Lightly grease a 9×13″ cake pan and put to one side.

In mixing bowlmix the brown and white sugar, the butter and the oil.
Break in the eggs, the vanilla and the buttermilk and mix thoroughly.

With a sifter or sieve, sift the soda, cocoa, flour, cinnamon and salt together.

Combine the two mixtures

Mix in the shredded courgettes and stir well.

Put everything into the cake pan and spinkle the choccie chips over the top.

Put the tin into the oven and bake for three quarters of an hour.

Allow the cake to cool down a little, Let it stand on a wire rack until cool enough to serve..
