Fresh Mushrooms With Sherry Recipe
This is a recipe for mushrooms that comes from Spain and that will satisfy any fungus fans in your family.
It serves roughly six, and works well as a side dish or a main meal depending on portion sizes.
Fresh Mushrooms With Walnuts Recipe
You Will Need:
2 Tbs butter
2 Tablespoons sunflower oil
225 g. (3 cup) mushrooms
1/2 cup chopped toasted walnuts
Two T. sherry (dry)
1 tbsp freshly squeezed lemon juice
one teaspoon orange peel or lemon peel – grated
2 Tablespoons chopped parsley
Salt
Method:
In a large skillet blend the oil and butter.
Turn the heat to medium/hot and transfer the mushrooms to the pan, cook lightly for a few minutest, stirring gently.
Now add the lemon juice, walnuts, sherry and citrus peel. Heat the mixture for a minute or so, mixing well to ensure the mushrooms are well coated with the liquid.
Add salt to taste, and sprinkle with chopped parsley just before serving.
